Guided by pitmaster veterans from Jalisco and Durango, Mexico x Uproot’s infamous slow grown, nutty buttery, lard forward, acorn finished heritage meats.
Pistola’s private event catering is now offered exclusively within the Rogue Valley with select dates for the 2025 season. We’ve spent the last two years selecting our team of heritage trained pitmaster and butchery contenders across the planet. Stories infused with old world ingredients and new world family recipes to elevate our signature forest raised slow grown meats in a next level Rogue local grown menu. From nose to tail fresh and smoked sausages, spit roasted whole pig, pâtés, charcuterie boards and so much more. Stay tuned for our official menu and our debut pop off.
